               Club House Cookies


1 1/2 cups shortening       3 cups quick oatmeal 
3 cups sugar                4 cups flour
3 eggs                      1 tsp. soda 
4 Tbsp. milk                2 tsp. cinnamon
1 1/2 cups raisins, cooked  1/2 tsp. salt
in a little water           1 cup nuts, optional

Cream shortening, sugar, add eggs, milk, raisins. 
Add dry ingredients. Bake at 375o.

               Ranch Style Cookies


1 cup shortening            2 cups flour
1 cup white sugar           1/2 tsp. baking powder
1 cup brown sugar           1 tsp. soda
2 eggs                      1/2 tsp. salt
1 tsp. vanilla              2 cups quick oatmeal
1 cup coconut               1 cup corn flakes
                            1 cup chocolate chips

Cream shortening, sugars, add eggs, vanilla. 
Add dry ingredients. Make into ball and flatten. 
Bake at 350o 12 to 15 minutes.

          Good Oatmeal Drop Cookies - Soft

1 cup shortening            2 cups sifted flour
1/2 cup white sugar         1 tsp. soda
3/4 cup brown sugar         1 tsp. salt
2 eggs                      1 1/2 tsp. cinnamon
1 1/2 tsp. vanilla          2 cups quick oatmeal
1/3 cup milk                1 cup raisins
Chopped dates or chocolate chips may be substituted for raisins.

Cream shortening, sugars, add eggs, vanilla, milk. 
Add dry ingredients. Drop by teaspoonful on cookie sheet. 
Bake at 350o.
                      
              Pride of Kansas Cookies

1 cup shortening            2 cups flour
1 cup white sugar           1/2 tsp. salt
1 cup brown sugar           1 tsp. soda
2 eggs                      1 tsp. baking powder
1 tsp. vanilla              3 cups oatmeal
1 cup coconut               1/2 cup nuts 

Cream shortening, sugars, add eggs, vanilla.  Add dry ingredients.
Drop onto cookie sheet. Flatten with glass dipped in sugar.
Bake at 375o.

              Butterscotch Chip Oatmeal Cookies

1 1/2 cups shortening       3 cups quick oatmeal
1 cup white sugar           3 cups flour
1 cup brown sugar           1 1/2 tsp. soda
3 eggs                      1 1/2 tsp. salt
1 1/2 tsp. vanilla          1 cup butterscotch chips

Cream shortening, sugars, add eggs, vanilla.  Add dry ingredients.
Bake at 375o.   Chocolate chips may be substituted.

              Molasses Oatmeal Cookies

1 cup shortening            3 cups flour
1 cup molasses              1/4 tsp. salt
1 1/2 cups white sugar      1 Tbsp. ginger
1/4 cup hot water           1/2 tsp. cinnamon
1 Tbsp. soda                4 cups oatmeal

Cream shortening, molasses, sugar. Dissolve soda in hot water, add,
then add dry ingredients. Form into balls. Flatten with glass dipped
in sugar. No eggs in this recipe.

              Date Oatmeal Cookies

2 eggs                      2 cups sifted flour
3/4 cup oil                 2 cups oatmeal
1/2 cup buttermilk          1 tsp. soda
1 cup chopped dates         1 tsp. cinnamon
1 tsp. vanilla              1/2 tsp. nutmeg
1/2 cup nuts                1 tsp. salt
                            1 cup brown sugar

Mix flour, oatmeal, soda, spices, salt, brown sugar together.
Beat eggs, add oil, buttermilk, chopped dates, vanilla, nuts.
Stir into dry ingredients until blended. Drop onto cookie
sheet. Bake at 375o.

          Oatmeal Refrigerator Cookies

1 cup shortening            1 1/2 cups sifted flour
1 cup white sugar           1 tsp. soda
1 cup brown sugar           1 1/2 tsp. salt
2 eggs                      3 cups oatmeal
1 tsp. vanilla

Cream shortening, sugars, add eggs, vanilla. Add dry ingredients.
Shape into roll and refrigerate overnight. Slice thin and bake at
375o.

          Grandma's Rice Krispie Cookies

1 cup margarine             3 1/2 cups flour
1 cup oil (use less)        1 tsp. salt
1 cup white sugar           1 tsp. soda
1 cup brown sugar           1 tsp. cream of tartar
1 egg                       1 cup rice krispies
1 tsp. vanilla              1 cup coconut
                            1 cup oatmeal

Cream shortening, oil, sugars, add egg, vanilla. Add dry
ingredients. Bake at 350o.

               Brown Sugar Cookies

1 1/3 cups shortening       4 cups flour
2 1/2 cups brown sugar      1 tsp. salt
3 eggs                      1 1/2 tsp. soda
1 1/2 tsp. vanilla          2 tsp. cream of tartar
1 tsp. lemon flavoring

Cream shortening, sugar, add eggs, flavorings. Add dry
ingredients. Bake at 375o.

               Soft Jumble Cookies
1/3 cup shortening          2 1/2 cups flour
1 cup sugar                 1 tsp. soda
1/2 cup sour cream          1 cup raisins or nuts.
1 tsp. lemon flavoring
1 tsp. vanilla

Cream shortening, sugar, add eggs, sour cream. Add flavorings.
Add dry ingredients. Drop onto cookie sheet. Bake at 375o.

                Apple Cookies

3/4 cup shortening          3 1/4 cups flour
1 cup white sugar           1 tsp. soda
1 cup brown sugar           1 tsp. baking powder
2 eggs                      1 tsp. salt
1 cup raw apples, chopped   1 cup raisins
fine                        1/2 cup nuts

Cream shortening, sugars, add eggs. Add dry ingredients,
then apples, raisins, nuts. Bake at 350o.

          Super-Duper Chocolate Cookies

1/2 cup shortening               2 cups flour
4 squares unsweetened chocolate  2 tsp. baking powder
2 cups sugar                     1/8 tsp. salt
4 eggs                           1/2 cup nuts
2 tsp. vanilla                   powdered sugar

Melt shortening, chocolate. Add sugar, vanilla. Add eggs.
Add dry ingredients. Chill several hours. Form into balls,
roll into powdered sugar. Bake at 350o 12 to 15 minutes.

        Chocolate Sandwich Cookies

2/3 cup shortening          2 cups flour
1 cup sugar                 1/2 tsp. soda
1/2 cup cocoa               1 tsp. baking powder
1 egg                       1 1/2 tsp. salt
1/4 cup milk
1 tsp. vanilla

Cream shortening, sugar, cocoa. Add egg, milk, vanilla. Add
dry ingredients. Chill dough. Roll to 1/8 inch thick. Cut
into small cookies. Bake at 350o. Put together with powdered
sugar frosting. These are good with peppermint flavored frosting.

        Chocolate Cookies

1 cup shortening            3 1/2 cups flour
1 cup sugar                 2 tsp. baking powder
1/3 cup cocoa               1/2 tsp. soda
2 eggs                      1 tsp. salt
2 tsp. vanilla              1/2 cup raisins

Cream shortening, sugar, cocoa, add eggs, vanilla. Add dry
ingredients, raisins. Drop onto cookie sheet & flatten with a
fork or shape into a roll and refrigerate. Slice thin. Bake at 350o.

        Basic Chocolate Brownies

2/3 cup shortening               1 1/3 cups flour
4 squares unsweetened chocolate  1 tsp. baking powder
2 cups sugar                     1/2 tsp. salt
4 eggs                           1 cup nuts
2 tsp. vanilla

Melt shortening, chocolate, add sugar, eggs, vanilla. Add dry
ingredients. Bake in jelly roll pan at 325o for 25 minutes.

               Coconut Brownies

1/3 cup margarine                2/3 cup sifted flour
2 squares unsweetened chocolate  1/2 tsp. baking powder
1 cup sugar                      1/4 tsp. salt
2 eggs                           1 1/3 cup coconut
l tsp. vanilla

Melt margarine & chocolate. Beat eggs, add sugar. Beat
thoroughly. Add melted chocolate. Add dry ingredients. Add
1/2 of the coconut and vanilla. Spread in 8 x 8 x 2 pan.
Combine 1 Tbsp. sugar and 2 tsp. melted butter and the
remaining coconut. Spread over batter. Bake at 350o
25 minutes.

        Date Nut Refrigerator Cookies

1/4 cup margarine           1 1/4 cups sifted flour
1 cup brown sugar           1/8 tsp. salt 
1 egg                       1/2 tsp. soda 
1/2 tsp. vanilla            1/2 tsp. cream of tartar 
1/4 cup chopped dates       1/2 tsp. cinnamon
1/4 cup nuts

Cream margarine, sugar. Add egg and vanilla. Beat until
light and fluffy. Add sifted dry ingredients. Stir in dates
and nuts. Form dough into roll about 1 1/2 inch in diameter.
Chill overnight. Slice thin and bake in 375o oven.

               Date Filled Cookies

1 cup margarine             3 1/2 cups sifted flour
2 cups brown sugar          1 tsp. soda
2 eggs                      1 tsp. salt
1/2 cup sour milk

Cream margarine, sugar. Add eggs, milk. Add dry ingredients.
Chill dough. Drop rounded teaspoonful on baking sheet. Flatten
slightly. Place small amount of filling on top. Place 1/2
teaspoonful of dough on top. Bake at 375o.

              Date Filling

2 cups chopped dates        3/4 cup water
3/4 cup sugar

Cook until thick.

	Filled Cookies

1 cup margarine             4 cups sifted flour
2 cups sugar                2 tsp. baking powder
2 eggs                      1/4 tsp. soda
1/4 cup milk                1/2 tsp. salt
2 tsp. vanilla

Cream margarine, sugar. Add eggs, milk, vanilla. Add dry
ingredients. Chill dough. Roll dough quite thin. Cut small
cookies. Put 1 tsp. filling on and cover with another cookie.
Bake at 350o.

        Filling

2 cups raisins              1/2 cup water
3/4 cup sugar

Cook until thick.

     Snickerdoodles

1 cup shortening            2 3/4 cups flour
1 1/2 cups sugar            2 tsp. cream of tartar
2 eggs                      1 tsp. soda
1/4 tsp. salt

Cream shortening, sugar. Add eggs. Add dry ingredients.
Roll into balls.  Roll in mixture of 2 Tbsp. sugar, 2 tsp.
cinnamon.  Bake at 400o 8 to 10 minutes. These
puff up then flatten out.

          Oatmeal Peanut Butter Cookies

1 1/2 cups margarine        4 cups flour
1 cup peanut butter         2 tsp. soda
2 cups sugar                2 tsp. salt
2 cups brown sugar          2 tsp. cinnamon
4 eggs                      3 cups oatmeal
1/2 cup milk                2 cups raisins
2 tsp. vanilla

Cream margarine, peanut butter, sugars. Add eggs, milk,
vanilla. Add dry ingredients, oatmeal, raisins.
Bake at 375o.

               Dream Bars

1/2 cup butter              1 cup flour
1/4 cup brown sugar

Mix and press in 9 x 13 pan. Bake at 350o for 15 minutes.

2 eggs                           1/4 cup flour
1 1/2 cups brown sugar           1/4 tsp. salt
1 1/2 squares chocolate, melted  1/2 tsp. baking powder
1 tsp. vanilla                   1/2 cup nuts
                                 1 cup coconut

Beat eggs, add brown sugar, melted chocolate. Add dry ingredients,
nuts & coconut. Put over crust when baked and bake 30 minutes
longer. Cut in squares.

           Lemon Coconut Bars

1 1/2 cups sifted flour     1/2 cup butter
1/2 cup brown sugar

Mix and pat in 9 x 13 pan. Bake 10 minutes at 275o.

          Filling

2 eggs                      2 Tbsp. flour
1 cup brown sugar           1/2 tsp. salt
1 1/2 cups coconut          1/2 tsp. baking powder
1/2 tsp. vanilla            1 cup nuts

Beat eggs, add brown sugar, vanilla. Add dry ingredients,
nuts and coconut. Spread on top of baked mixture. Bake
20 minutes at 350o. Frost with the following:
1 cup powdered sugar, Tbsp. melted butter, juice of 1 lemon.
Spread on bars while warm.

          Blonde Chocolate Chip Brownies

2/3 cup margarine           2 cups flour
2 cups brown sugar          1 tsp. baking powder
2 eggs                      1/4 tsp. soda
2 tsp. vanilla              1 tsp. salt
2 Tbsp. hot water           1/2 cup chocolate chips

Cream margarine, sugar. Add eggs, vanilla, hot water.
Add dry ingredients. Spread in 9 x 13 pan. Sprinkle chocolate
chips over top. Bake at 350o 25 to 30 minutes.
Cool slightly and cut into bars.

        Cinnamon Raisin Bars

1/2 cup margarine           1 1/2 cups sifted flour
1 cup brown sugar           1/2 tsp. salt
1 Tbsp. water               1/2 tsp. soda
                            1 1/2 cups quick oatmeal

Cream margarine, brown sugar. Sift together dry ingredients.
Stir into creamed mixture. Add oatmeal, water. Mix until
crumbly. Pat half of mixture into a greased 9 x 13 pan. Spread
raisin filling on top, then add remaining mixture. Add 1 Tbsp.
water on top. Bake at 350o for 35 minutes.

               Raisin Filling

1/4 cup sugar               1 cup water
1 Tbsp. corn starch         2 cups chopped raisins

Combine sugar, corn starch. Stir in water and raisins.
Cook until thickened.

               Cinnamon Icing

Mix 1 cup powdered sugar with 1/4 tsp. cinnamon.  Add enough
liquid to make the right consistency to spread.

            Brown Sugar Brownies

2/3 cup margarine           2 2/3 cups flour
2 1/4 cups brown sugar      2 tsp. baking powder
3 eggs                      1 tsp. salt
1 tsp. vanilla              1 cup nuts
                            1 cup chocolate chips or raisins

Cream margarine, brown sugar. Add eggs, vanilla. Add dry
ingredients, nuts, chips or raisins. Bake in a jelly roll
pan at 350o for 25 minutes.

           Chewy Peanut Squares

2/3 cup margarine           2 cups flour
1 cup peanut butter         2 tsp. baking powder
1 cup brown sugar           1 tsp. salt
2 cups white sugar          2 2/3 cups flaked coconut
4 eggs
2 tsp. vanilla

Cream margarine, peanut butter, sugars. Add eggs, vanilla.
Add dry ingredients, coconut. Bake in greased jelly roll
pan at 350o for 25 to 30 minutes.

         Chewy Chocolate Cookies

1 1/4 cups butter           2 cups flour
2 cups sugar                3/4 cup cocoa
2 eggs                      1 tsp. soda
2 tsp. vanilla              1/2 tsp. salt
                            1 cup nuts

Cream butter, sugar, add eggs, vanilla. Add dry ingredients.
Drop on ungreased cookie sheet. Bake at 375o for 8-9 minutes.
Do not overbake. Let set on cookie sheet 1 minute before
removing. These puff up during baking, flatten as they cool.

           Golden Crinkles

3/4 cup margarine           2 1/4 cups flour
1 cup brown sugar           1/4 tsp. salt
1 egg                       1 tsp. ginger
1/4 cup molasses            1 tsp. cinnamon
                            2 tsp. soda

Cream margarine, sugar, add egg, molasses. Add dry ingredients.
Chill. Roll into balls and roll in sugar. Bake at 375o.

        Peanut Butter Cookies

1/2 cup margarine           2 cups flour
1/2 cup peanut butter       3/4 tsp. soda
1/2 cup brown sugar         1/4 tsp. salt
1/2 cup white sugar         1/2 tsp. baking powder
1 egg
1/4 cup orange juice

Cream margarine, peanut butter, sugars, add egg, orange juice.
Add dry ingredients. Chill. Form into ball, flatten with a fork.
Bake at 375o. Brush with slightly beaten egg white and
sprinkle with colored sugar.

          Black Walnut Refrigerator Cookies

1 cup butter                3 1/2 cups flour or more
2 cups brown sugar          1 tsp. soda
2 eggs                      1/2 tsp. salt
1 tsp. vanilla              1 cup walnuts

Cream butter, sugar, add eggs, vanilla. Add dry ingredients.
This is very stiff. Roll into 2 rolls. Place in refrigerator
for several hours. Slice very thin. Bake at 375o.

               Orange Slice Cookies

4 eggs                      2 cups sifted flour
2 1/4 cups brown sugar      1 tsp. baking powder
1 cup nuts                  1/4 tsp. salt
18 orange slices, cut in
small pieces.

Beat eggs, add brown sugar. Add dry ingredients, nuts and
orange slice pieces. Spread in jelly roll pan. Bake at 325o
until brown. Remove a few minutes before done and spread with
following glaze: 1 cup powdered sugar, 3 Tbsp. orange juice,
1 tsp. butter. Bake a few minutes. Can sprinkle with colored
sugar after glaze is put on. Makes a pretty Christmas cookie.

              Raisin Oatmeal Bars

1 cup raisins               1 cup flour
1/4 cup hot water           1/2 tsp. salt
1/3 cup shortening          1/2 tsp. baking powder
1 1/4 cups brown sugar      1/2 cup quick oatmeal
1 tsp. vanilla
2 eggs

Combine raisins & hot water. Set aside. Cream shortening,
sugar. Add eggs, vanilla, raisins. Add dry ingredients.
Bake at 375o 20 to 22 minutes.

              Applesauce Bars

1/2 cup shortening          1 1/2 cups flour
1 cup sugar                 1/4 tsp. salt
1 egg                       1 tsp. soda
1 cup thick applesauce      1/2 tsp. cinnamon
1/2 cup raisins             1/4 tsp. nutmeg, dash of cloves
1/2 cup nuts

Cream shortening, sugar, add egg, applesauce. Add dry
ingredients, raisins, nuts. Spread in 9xl3x2 pan that has
been greased and floured. Bake at 375o 25 minutes. Cut in
squares while warm and roll in powdered sugar.

              Coffee Shop Oatmeal Cookies

1 cup margarine             2 cups flour  
1/2 cup white sugar         1/2 tsp. cinnamon     
1 cup brown sugar           1/2 tsp. salt
2 eggs                      1 tsp. soda
1/4 cup milk or buttermilk  2 tsp. baking powder
1 tsp. vanilla              1 cup raisins
2 cups quick oatmeal        1 cup chocolate chips
                            1 cup nuts

Cream margarine, sugars, add eggs, milk, vanilla. Add dry
ingredients. Bake at 375o.

              Molasses Sugar Cookies

1 1/2cups shortening        4 cups flour
2 cups sugar                4 tsp. soda
1/2 cup molasses            1 tsp. cloves
2 eggs                      1 tsp. ginger
                            2 tsp. cinnamon
                            1 tsp. salt

Melt shortening, add sugar, molasses, eggs. Add dry ingredients.
Chill thoroughly. Form into 1 inch ball, roll in sugar.
Bake at 375o. These puff up and crack while baking.

               Molasses Cookies

1 cup shortening            2 to 6 cups flour
1 cup sugar                 4 tsp. soda
1 cup molasses              2 tsp. ginger
1 cup sour milk             2 tsp. cinnamon
                            1/2 tsp. cloves
                            1/4 tsp. nutmeg
                            1 tsp. salt

Cream shortening, sugar, add molasses, sour milk. Sift 2 cups
flour with dry ingredients. Add more flour to make a soft
dough. Roll out and cut. Sprinkle sugar on top. Bake 5 to 8
minutes at 400o. Chill dough before rolling out.

               Drop Sugar Cookies

1/2 cup shortening          2 cups flour
1 cup white sugar           3 tsp. baking powder
1 egg                       1/2 tsp. salt
1/4 cup milk
1 tsp. vanilla

Cream shortening, sugar. Add egg, milk, vanilla. Add dry
ingredients. Drop onto cookie sheet. Bake at 375o
10 to 12 minutes.

          Old Fashioned Soft Molasses Cookies

1/2 cup shortening          2 1/4 cups flour
1/2 cup sugar               2 tsp. soda
1/2 cup molasses            1 tsp. ginger
1/2 cup water               1 tsp. cinnamon
1 egg                       1/4 tsp. salt

Cream shortening, sugar, add egg, molasses, water. Add dry
ingredients. Drop onto cookie sheet.  Bake at 375o &
8-1O minutes.


        Rock Cookies or Cupcakes

1 cup shortening            3 1/4 cups flour
2 1/2 cups brown sugar      1/2 tsp. salt
3 eggs                      1 tsp. cinnamon
1 1/2 cups raisins          1 tsp. soda, 2 Tbsp. boiling water
1 cup chopped nuts

Cream shortening, sugar, add eggs. Add soda dissolved in water.
Add dry ingredients. Bake cookies at 375o 12 to 14 minutes.
Bake cupcakes at 350o 20 to 25 minutes.  These are good frosted
with a powdered sugar frosting made by browning butter or
margarine first.

        Raisin CrissCross Cookies

1 cup shortening            3 1/2 cups flour
1 1/2 cups sugar            1 tsp. salt
2 eggs                      1 1/2 tsp. cream of tartar
2 Tbsp. milk                1 1/2 tsp. soda
1 tsp. vanilla              1 cup raisins

Cream shortening, sugar, add eggs, milk, vanilla. Add dry
ingredients, raisins. Drop onto cookie sheet. Use fork or
meat tenderizer to criss cross the cookies. Bake at 375o.

             Fruit Cookies

1/2 cup shortening          2 cups flour
1 cup brown sugar           1/4 tsp. salt
1 egg                       1 tsp. cinnamon
4 Tbsp. cream               1/2 tsp. nutmeg
1 tsp. vanilla              1 tsp. soda
1/2 cup figs                1 tsp. baking powder
1/2 cup dates               1/2 cup pecans

Cream shortening, sugar, add egg, cream, vanilla. Add dry
ingredients. Bake at 375o. Chill dough before baking.
