Physically, cellulose is insoluble in water and most organic solvents and is odorless and tasteless. It forms rod-like structures that will hydrogen bond together to form strong microfibrils that make-up the structures of cell walls and confer rigidity. Cellulose is one of the main structural components of the primary cell walls of green plants. It is also found in bacteria and algae. In plants, cellulose represents about one-third of their biomass and is one of the most abundant polymers on earth. Chemically, cellulose is classified as a complex carbohydrate. Cellulose is a generally linear β-1,4 glucan that will form straight glucan chains without coiling or branching (unlike starch).
