Camarones al Mojo de Ajo (Garlic Shrimp)

Serves 4

·        1 lb of raw medium size shrimp

·        3 whole garlic cloves

·        10 minced garlic cloves

·        ¾ tsp of salt

·        ¾ tsp of black pepper

·        ¾ tsp of white vinegar

·        3 tbsp of extra virgin olive oil

·        3 tbsp of butter

·        1 fresh lime


Remove the shell from the shrimp.  In a blender, puree the whole garlic cloves, salt, pepper, vinegar, and olive oil.  Add to uncooked shrimp and let it stand for 20-30 minutes.  In a skillet heat up the butter and add the minced garlic; Sauté the garlic until golden brown. Add the shrimp and lower heat.  Cook until shrimp are pink in color.  Remove from stove and sprinkle with lime juice.

·        Serve with Spanish white rice and vegetables if desired.
